For Heaven’s Cakes: Delicious tips from our Sugar Angel Leanne

Leanne’s baking business began when her son requested a specific cake for his birthday. It wasn’t something you could pick up from the local grocery store, so she decided to create it herself. It was a learning process, and YouTube played a huge part in making the intricate parts of the cake. The final product was a huge success and became her most-liked photo on her Instagram that year! Her son’s birthday cake was only the beginning. She was soon contacted by numerous parents asking to recreate the cake for their kids or purchase their own custom cakes.

Three years and over 500 cakes later, Leanne created this beautiful candy rollercoaster cake for Sophia. She made a fresh lemon cake with lemon curd and vanilla buttercream as one tier, and a strawberry cake with strawberry filling and vanilla buttercream as the other tier.

Leanne says she always adds extra zest to her recipes and finds that freeze-dried strawberries add a more favorable flavor to cake and icing as opposed to fresh strawberries. She’s also a fan of a more traditional method of fresh strawberry filling, always using real, fresh ingredients, real butter in her buttercream and organic bakers vanilla. Her design was based mostly on a few inspirational photos submitted by Sophia’s mom. She started creating the fondant accents almost immediately because she knew they would take several days to dry.

Leanne’s favorite cake tip is to always freeze your cakes directly out of the oven in freezer bags and aluminum foil! Don’t let them cool first. This locks in all the moisture and allows for a much easier stacking and decorating process!

Leanne was introduced to Icing Smiles through another baker friend and immediately knew it was right for her. She loves to see people’s faces light up at the sight of their cake! Leanne hopes to help brighten the world with her beautiful creations for years to come.
