Emily’s Strict Diet Friendly Unicorn Cake to Celebrate!
It’s not just the cake theme that’s great.
For her birthday this year, Emily celebrated more than just turning a year older, because this year she got a birthday cake that was both unicorn and mermaid-themed. And who doesn’t love unicorns and mermaids? But more importantly than the theme was the fact that the cake was safe for Emily to eat. Emily has mitochondrial disease, a disorder that affects the energy-producing structures in cells, which causes her to have severe allergic reactions to different foods like eggs, gluten, dairy, peanuts, soy, and tree nuts. So, a typical birthday cake is out of the question for her.
One of our hardworking and truly dedicated Sugar Angels, Jennifer Moshier, soared in to help Emily have one of the most magical birthday cakes. Jennifer not only took the time to understand Emily’s dietary restrictions and cross contaminations concerns; she went to buy the ingredients for Emily’s cake at the family’s trusted grocery store just to be safe. Though this may seem like a tall order for any baker, Jennifer has worked with other clients who had dietary restrictions and easily went the extra mile to make a safe cake. As Emily’s mom states, “It was a big leap of faith for me as a parent to trust a complete stranger with such a request, but after watching cake shows during yet another inpatient stay [at the hospital], Emily was requesting nothing less than a ‘real’ birthday cake.” Emily suffers from severe allergic reactions that stop her from going to school and living life to its max. Nevertheless, Emily remains spirited and brave even in the toughest of times and she is so deserving of a birthday cake that she can celebrate and eat.
