Becky, Our Brave Sugar Angel, Shares a Decorating Technique!
Sugar Angel Becky Sauer is a home baker, mostly creating cakes for family and friends. So, she was naturally very excited but also nervous when she was asked to do her first cake. The beautiful Little Mermaid cake was made for a sibling of a special needs child. Becky was even more excited to learn that the recipient was for a child that she does volunteer work for at her church!

For this cake, Becky tried a new technique called Royal Icing Transfers. She used her phone as a guide to outline each character. After she outlined the characters, she then filled them with white royal icing. After they were all filled and dried, she then hand painted them with gel food coloring. One tip Becky gave was to keep the dye from the black outlines from running is to brush a thin layer of shortening over the outline after it has dried. For the sea decorations, she used a combination of rice crispy treats and modeling chocolate. She chose modeling chocolate over fondant for a more delicious taste!
Becky loved delivering the cake and seeing the excitement of the recipient. Any child would be excited to see such a beautifully hand-crafted cake!  Becky stepped out of her comfort zone with this creation, and she nailed it! We are proud to have her as a Sugar Angel and look forward to seeing more of her work and techniques.
